Finlandia Bistro x Jouni Toivanen: REHEDONISM dinner
Time & place
Finlandia Bistro
On May 13, 2026, Finlandia Bistro will host a REHEDONISM dinner designed by guest chef, Michelin-starred Jouni Toivanen.
The REHEDONISM of food is a concept created by Toivanen. It makes us ponder what food really is and where pleasure originates.
REHEDONISM is gastronomy where responsibility does not diminish pleasure but deepens it. It is food that does not cover but reveals. Quality ingredients that have grown in the rhythm of nature and seasons that guide the making.
According to Toivanen, food is always connected to place, time, and how it has been produced. At its best, it creates a relationship between humans, nature, and culture, and also reconnects food with soil, water, and life.
When this connection is restored, the taste of food deepens. At the same time, responsibility ceases to be a separate addition and becomes part of the experience.
In REHEDONISM, simplicity is not a lack but precision. It reminds us that the future food culture cannot be based on unlimited growth, but pleasure does not have to be sacrificed.
Toivanen’s thinking aligns perfectly with the food philosophy of Finlandia Hall: good food is more than a dish on a plate – it is a an experience built on values and actions.
